Sour, spicy, fresh, and fragrant, one bowl warms your whole body~ Super easy to make, even kitchen beginners can handle it!


🥣 Ingredients Preparation (Serves 2-3)

✅ Main Ingredients:

  • Soft tofu 1 block (cut into thin strips)
  • Shiitake mushrooms 4 pieces (thinly sliced)
  • Carrot ½ (julienned)
  • Wood ear mushrooms 5 pieces (soaked and shredded)
  • Egg 1 (beaten)

✅ Seasonings:

  • Light soy sauce 2 tablespoons
  • Aromatic vinegar 3 tablespoons (adjust sourness as needed)
  • White pepper powder 1 tablespoon (the soul of spiciness!)
  • Salt ½ tablespoon
  • Starch 2 tablespoons (for thickening)
  • Sesame oil a little (the finishing touch ✨)

👩🍳 Detailed Steps

1️⃣ Stir-fry the base ingredients

  • Heat a pan with little oil, stir-fry the shiitake slices, carrot strips, and wood ear strips for 1 minute to release aroma.

2️⃣ Add water to cook the soup

  • Pour in 800ml of water (or broth for richer flavor), bring to a boil over high heat, then simmer on medium heat for 3 minutes.

3️⃣ Season and thicken

  • Add light soy sauce and salt to season, keeping the soup slightly salty.
  • Key point! Mix starch with 3 tablespoons of water, slowly pour into the soup while stirring until thickened (like thin yogurt).

4️⃣ Add tofu & egg drop

  • Gently add tofu strips, cook for 1 minute.
  • Turn off heat! Slowly drizzle in beaten egg in a circular motion, let it sit for 10 seconds before stirring to get tender egg ribbons~

5️⃣ Final sour and spicy touch

  • After turning off heat, add aromatic vinegar and white pepper powder (❗ adding them last intensifies the sour and spicy flavor!)
  • Drip a bit of sesame oil, sprinkle chopped scallions/cilantro.
